PERLAMANDE respects nature: almonds and other dried fruit and nuts are neither grilled nor roasted.
The processing of almonds often implies heating stages (grilling or roasting) detrimental to the taste as well as to the nutritional value. In fact this heating caramelises the taste and reduces the amount of vitamin E (tocopherol and alpha-tocopherol) entailing a reduced conservation time and a denaturation of the polyunsaturates (“the good oils” of the almond).

The marzipans and other dried fruit and nuts from PERLAMANDE are renowned for the exceptional creaminess of their texture and their incomparable natural taste.
These qualities spring from a method of preparation that is particularly careful and meticulous: the nuts are finely ground by mill stones, slowly and without heating. The paste obtained is not heated, so all the qualities and the taste of the nuts are left intact.
This method is obviously much longer than that usually practised! But quality comes at a price, and those who have tasted our products have appreciated the difference!
