Stir fry basmati rice with lentils & tahini sesame butter

  • 1 kg potatoes
  • 250 g basmati rice & lentils from Beendi brand
  • 2 tbsp tahini sesame butter
  • 2 tbsp tomato paste
  • 1 tbsp paprila
  • Based plant drink
  • Wash, peel and cut the potatoes.
  • Boil the potatoes into water for 30 minutes.
  • Meanwhile, brown the rice/coral lentil mix in a hot pan with 1 tbsp of olive oil.
  • Add 640ml of water.
  • Bring to a boil, cover and cook for 14 minutes.
  • Add tomato paste, tahini sesame butter & paprika. Mix and adjust.
  • Drain the potatoes and mash them with 1 cup of cooking water. Salt, pepper.
  • Cover the rice/lentil mix with the potatoes.
  • Make a grid with a fork, brush with based plant drink and put in the oven for 30 minutes.
  • Serve hot and sprinkle with fresh parsley.
