Sesame is an oleaginous plant whose seed is consumed.
Sesame seeds are rich in unsaturated fatty acids, vitamin B1, magnesium, phosphorus, calcium and iron. It also contains vitamin B2, potassium and vegetable proteins.
Sesame is an annual plant with yellow, purple, white or violet flowers. The plant's stem is made up of capsules containing many sesame seeds, from 50 to 100, sometimes up to 200.
Harvesting begins when the lowest capsules begin to open. The plants are cut, gathered into sheaves and dried. They are then shaken upside down over a tarpaulin to collect the sesame seeds.
Because of their small size, sesame seeds are processed mechanically.
The process is virtually identical to that used for other dried fruits: the seeds are steamed for a few seconds to depelliculate them. Once dry, the sesame seeds are cold-ground on a stone millstone. Sesame is raw, which preserves its authentic taste and nutritional qualities.
