BLOOM/HARVEST
The peanut is an annual herbaceous plant that can reach 40 to 80 cm in height.
Peanut flowers are bright yellow butterfly-shaped.
The plant is unique in that it produces stringy-shelled fruits underground, containing seeds better known as peanuts.
When the large leaves start to turn yellow, the seeds are ready to be harvested. All you have to do is carefully dig up the plant, then shake it to release the pods.

Once harvested and sorted, the peanut skin is removed in the same way as the almond skin: it is moistened and then steamed for a few seconds to remove the skin. A slow natural drying process then follows, before the peanut is ground on a millstone.
